INGREDIENTS
3 tablespoon butter (~43g)
1 egg
½ teaspoon salt
2 teaspoons sugar
3 cups all purpose flour (i didn't bother to sift!😅)
1½ teaspoons dry yeast
Cornmeal (i used semolina)
DIRECTIONS
Put ingredients in the machine in the order listed.
Start the Mix Dough cycle (C-10).
Sprinkle plain flour on work table.
Drop dough on work table. Cover lightly with flour and roll dough to ½ inch thickness.
Flour the round cutter. Cut circles and coat both sides with semolina flour.
Set aside to rise for 20 to 30 minutes. Cover loosely with cling wrap.
Heat up flat frying pan on medium heat. Sprinkle semolina in pan.
Lay down dough, slightly apart from each other.
Cover pan with lid. Cook for about 5 to 10 minutes on each side, occasionally turning the muffins around for even cooking and browning. If not quite brown, leave slightly longer.
Insert a fork around the muffin to 'pry' open.
