Trying briyani today because I'm dying to cook my frozen chicken straight from freezer. Lol!
And trying to experiment if my basmati will turn out well without pre-soaking them.
Outcome? Awesome!!
Note to self: This method makes my chicken too soft (though still yummayy). Next time I want to try to cook the frozen chicken and rice together instead of separate cooking. ✌ðŧ
Another note: This recipe is slightly spicy. De-seed the green chillies if you don't want it to be spicy.
3-5 cloves garlic + 1 inch ginger *blend together
1 onion, sliced thinly
1 cinnamon stick
1 star anise
3 cardamom
3 cloves
2 tbsp ghee
3 tbsp Babas's briyani spice
1 tomato, wedged
2 green chillies, slit *no need to deseed
Water
Seasonings
Chicken *i used frozen chicken thigh
3 cups basmati rice *i didn't pre-soak my rice ð
2 cups water
1 cup evaporated milk
*ratio of water+milk to rice 1:1.. don't need to increase water because there is already water when we cook the gravy
METHOD
Step 1:
Bake Mode - Fish, without lid.
1. Put in ghee, cinnamon, star anise, cardamom, cloves, garlic ginger paste and sliced onions. Fry till fragrant.
2. Put in briyani spice and fry for few minutes. Add water to prevent burning of spices.
3. Drop in wedged tomatoes and green chillies, stir for few seconds.
4. Season to taste. Once fragrant, stop bake mode.
Step 2:
Chicken Mode, with lid, valve seal.
1. Put in frozen chicken (becoz i am lazzzyy to defrost ð
). Smear the top of chicken with the spice.
2. Cover and start chicken mode till beep.
Step 3:
Rice Mode, with lid, valve seal.
1. Wash and drain basmati rice. Put into pot.
2. Pour in 2 cups of water and 1 cup of evaporated milk. Mix the rice slightly.
3. Taste gravy. Add seasonings if desire.
4. Start rice mode and cook till beep. While waiting for the beep, you can start doing the dishes. ðĪŠ
